Biryani: Delicious Spiced Rice with Chicken in a Fusion of Indian Flavors
Ingredients:
- 500 grams (1.1 pounds) of chicken (you can use thighs, breasts, or a combination of both), cut into pieces
- 2 cups of basmati rice
- 1 large onion, thinly sliced
- 3 cloves of garlic, minced
- 1 small piece of fresh ginger, grated
- 2 medium tomatoes, chopped
- 1 cup of plain yogurt
- 1/2 cup of fresh mint leaves, chopped
- 1/2 cup of fresh cilantro leaves, chopped
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of turmeric
- 1/2 teaspoon of sweet paprika
- 1/4 teaspoon of chili powder (optional, for a spicy kick)
- Vegetable oil
- Salt to taste
Instructions:
Rinse the basmati rice under cold water until the water runs clear. Then, soak the rice in cold water for at least 30 minutes. Cook the rice in salted water according to the package instructions until it is al dente. Drain and set aside.
In a large skillet or pot, heat a little vegetable oil over medium heat. Add the onion and cook until golden and caramelized. Remove approximately half of the caramelized onions and reserve them for final garnishing.
In the same skillet, add the minced garlic and grated ginger. Cook for about a minute until fragrant.
Add the chopped tomatoes to the skillet and cook until they soften and form a sauce-like consistency.
Add the chicken to the skillet and cook until it is browned on all sides. Then, add the yogurt, chopped mint and cilantro leaves, ground cumin, ground coriander, turmeric, sweet paprika, and chili powder (if desired). Mix well to ensure that the chicken is coated with the spices and yogurt. Cook for a few minutes to allow the flavors to blend.
Preheat the oven to 180°C (350°F).
In a baking dish, layer the cooked basmati rice followed by a layer of the chicken with the sauce. Repeat these layers until all the rice and chicken have been used, ending with a layer of rice on top.
Cover the baking dish with aluminum foil and bake for approximately 30 minutes, or until the biryani is heated through and the flavors have melded.
Remove the biryani from the oven and let it rest covered for a few minutes.
When serving, garnish the biryani with the reserved caramelized onions and some fresh mint leaves
