Chicken Korma Recipe
Ingredients:
- 500 g chicken (breast or thighs), cut into pieces
- 1 cup plain yogurt
- 1 large onion, finely chopped
- 2 tablespoons ginger and garlic paste (a mixture of crushed ginger and garlic)
- 1/2 cup almonds or cashews, ground
- 1/2 cup coconut cream
- 2 teaspoons garam masala
- 1 teaspoon turmeric
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cinnamon powder
- 4-5 cardamom pods
- 2-3 cloves
- 2 tablespoons vegetable oil
- Salt to taste
- Fresh cilantro leaves for garnishing
Instructions:
In a bowl, mix yogurt, ginger and garlic paste, garam masala, turmeric, cumin powder, coriander powder, cinnamon powder, and a pinch of salt. Marinate the chicken in this mixture for at least 1 hour (you can refrigerate it overnight for better results).
In a large pan, heat oil over medium heat. Add the cardamom pods and cloves, and cook for a few seconds until they release their aroma.
Add the chopped onion and cook until golden brown.
Add the marinated chicken to the pan and cook until well browned on all sides.
Add the ground almonds or cashews and mix well.
Pour the coconut cream into the pan and stir to combine all ingredients.
Cook over medium-low heat for about 15-20 minutes, or until the chicken is tender and fully cooked. Add a little water if the sauce becomes too thick.
Adjust the salt as needed and add more spices if you prefer a stronger flavor.
Once the chicken is cooked and the sauce reaches the desired consistency, remove from heat.
Serve the hot chicken korma, garnished with fresh cilantro leaves.
You can accompany the chicken korma with cooked basmati rice or naan bread.
